It’s Getting Easier For People With Celiac Disease

Don’t get me wrong, dealing with celiac disease, an autoimmune condition that causes gluten intolerance, is not easy, but it is getting easier.  The other day, I noticed that my local supermarket just added a huge gluten-free section.  There have been a plethora of recent newspaper and magazine articles about the condition, usually with interesting recipes.  I just want to call your attention to an article in the NYT the other day that is a case in point.  The article was entitled, “Removing sacrifice from gluten-free eating,” and was written by Catherine Saint Louis, who herself has gluten-intolerance (it wasn’t clear from the article if the author actually has celiac disease or gluten-intolerance for some other reason, but that is irrelevant).  The article offers some useful tips for tasty gluten-free eating, which can be a challenge at times.  Check it out.
